Based on crops that the University of Minnesota’s Forever Green Initiative is planning to grow, the menu includes:
- a composed bean salad made from Jacob’s Cattle Gold Beans, Tiger’s Eye
- Lina Cisco’s Bird Egg beans tossed with fresh pea shoots.
- creamy potato salad made with new crop potatoes
- hazelnut cookies made with the woody perennial crop
In addition, the Food Building’s Red Table Meats charcuterie and Baker’s Field breads will be offered by The Food Building’s locally owned farm-to-table restaurant, The Draft Horse. Fine cheeses from Alemar, one of Minnesota’s premier artisan cheese makers will also be on the table. A salad of organic leafy greens from Urban Organics Auqaponic farm will round out the assortment.
You’ll also learn what exciting things are happening in the food and agriculture community, especially the Forever Green Initiative.
